Method

Heat a pan on a medium heat and add 2 tablespoons olive oil. Add the chopped onion and butternut squash, sea salt, and pepper, and sauté for 10 minutes. While the onion-butternut squash mixture is cooking, in a large salad bowl add cooked quinoa, chicken, cranberries, and toasted walnuts. Once the onion-butternut squash is finished, add to bowl and dress with the balsamic vinaigrette dressing.

For Quick Balsamic Vinaigrette Dressing

Whisk all the ingredients in a small bowl until combined.
